Ingredients
1 cup full-fat cottage cheese
4 large eggs
1/4 cup grated Parmesan cheese
1/4 cup almond flour
1/4 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon Italian seasoning
1 cup shredded mozzarella cheese
1/2 cup sugar-free marinara sauce
Toppings of choice (pepperoni, mushrooms, olives, sausage, etc.)
Fresh basil leaves (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Blend the cottage cheese until smooth.
3. In a mixing bowl, whisk eggs and stir in the blended cottage cheese.
4. Add almond flour, Parmesan, baking powder, garlic powder, onion powder, and Italian seasoning. Mix well.
5. Spread the mixture into a round or rectangular crust shape, about 1/4-inch thick.
6. Bake the crust for 15–20 minutes until golden brown and set.
7. Remove from oven, add marinara sauce, cheese, and desired toppings.
8. Return to oven and bake an additional 10–15 minutes until cheese is melted and bubbly.
9. Cool slightly, garnish with fresh basil, slice, and serve.
Notes
For extra crispiness, broil the pizza for 2–3 minutes at the end.
Make sure to blend the cottage cheese well to avoid a lumpy base.
Store leftovers in an airtight container and reheat in oven for best texture.
