Ingredients
1 cup full-fat cottage cheese
2–3 tbsp powdered erythritol or allulose
1 tsp vanilla extract
Optional: 1 tbsp cocoa powder or peanut butter
Optional: pinch of salt or lemon zest
Instructions
1. Add all ingredients to a high-speed blender or food processor.
2. Blend until smooth and creamy.
3. Taste and adjust sweetness or add-ins if needed.
4. Transfer to a freezer-safe container.
5. Freeze for 2–3 hours until firm.
6. Let sit for 10–15 minutes before scooping.
Notes
Use allulose for a softer texture after freezing.
