Description

This Keto Lemon Pound Cake is moist, bright, fluffy, and sugar-free while keeping all the buttery, comforting flavor of the Southern classic pound cake. Perfect for keto brunches, snacks, or an elegant dessert while staying low-carb.

Ingredients

Scale

2 cups almond flour

2 tbsp coconut flour

4 large eggs, room temperature

1/2 cup butter, melted

1/2 cup monk fruit sweetener

1 tbsp lemon zest

2 tbsp lemon juice

1/2 cup sour cream

1 tsp baking powder

1/4 tsp salt

1 tsp lemon extract (optional)

Instructions

1. Preheat your oven to 325°F and line a loaf pan with parchment paper.

2. In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.

3. In another bowl, beat eggs, melted butter, monk fruit sweetener, lemon zest, lemon juice, lemon extract, and sour cream until smooth.

4. Add the dry ingredients to the wet ingredients and mix until combined, being careful not to overmix.

5. Pour the batter into the prepared loaf pan and smooth the top.

6. Bake for 50-60 minutes until a toothpick comes out clean or with a few moist crumbs.

7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

8. Optional: Mix powdered monk fruit sweetener with lemon juice for a sugar-free glaze and drizzle over the cooled cake before serving.
