Description

A creamy, nutty, keto-friendly pistachio ice cream made with cottage cheese for a low-carb indulgence.


Ingredients

1 cup full-fat cottage cheese

1/3 cup roasted unsalted pistachios, chopped

2 tbsp keto sweetener (monk fruit or allulose)

1 tsp vanilla extract

1/2 tsp almond extract (optional)

1 tbsp MCT oil or heavy cream (optional)


Instructions

1. Blend cottage cheese until smooth.

2. Add sweetener, vanilla, and almond extract, blending until combined.

3. Fold in chopped pistachios.

4. Pour into a container and freeze, stirring every 30 minutes for 2 hours.

5. Let sit at room temperature for 10 minutes before serving.

Notes

Add sugar-free chocolate chips for variation.
