Creamy, refreshing keto popsicles made with simple low-carb ingredients. Perfect for beating the summer heat without the sugar!
Ingredients
1 cup full-fat coconut milk
4 oz cream cheese (softened)
1/2 cup fresh or frozen blueberries
2 tbsp monk fruit sweetener
1 tbsp peanut butter (no sugar added)
2 tbsp unsweetened cocoa powder
1/2 tsp vanilla extract
1 tsp lime zest
2 tbsp lime juice
Instructions
1. Blend desired ingredients based on flavor combo (see article for three options).
2. Taste and adjust sweetness to preference.
3. Pour into popsicle molds.
4. Freeze for 4–6 hours until solid.
5. Remove and enjoy. Store extras in freezer bags with parchment in between.
Notes
Each popsicle contains under 3g net carbs.
Use parchment between popsicles in storage.
Swap in strawberries, raspberries, or almond butter as preferred.
